Oregano is considered a staple herb in Corfiot cuisine

Corfu is mostly planted with olive groves and vineyards but wild herbs have always been part of the Corfiot’s everyday cooking habits. In Corfu we collect our oregano and dry it. You can find oregano in the mountains where it grows naturally. We pick the oregano when it blooms, during the months of July – August, i.e during the flowering period of the plant. The dried and ground leaves are most often used in Greece to add flavor to Greek salad, and is usually added to the lemon-olive oil sauce that accompanies fish or meat grills and casseroles.

 

Oregano plays a major role in Greek cuisine today, just as it did in ancient times. It finds its way into many Greek dishes, from the most basic traditional horiatiki (Greek salad) to topping fish dishes andย  fried potatoes.
